Ingredients for 4 persons
- 1 cup couscous and 1 cup water
- 1 cucumber, diced
- 2 tomatoes or 20 cherry tomatoes cut into cubes
- 1 sweet onion, finely chopped
- 4 sprigs of chopped fresh mint
- 100ml "olive oil extra virgin"
- juice of 1 lemon
- a "pinch of fleur de sel"
Preparation recipe tabouleh vegetarian
Wash the vegetables clean and cut them into small cubes.
Bring 1 cup of water to the boil and turn off the heat.
Add the couscous and put the lid on the pan.
Leave for about 5 minutes until the water is fully absorbed by the couscous and allow to cool.
Stir the chopped vegetables into the couscous.
Add the mint, lemon juice and olive oil and mix all ingredients.
Sprinkle a little fleur de sel over the tabouleh.
