Recipe thyme syrup

You can make this 'recipe thyme syrup' with fresh thyme or with dried thyme. Depending on the application, you can make this syrup as a treat or as a remedy for coughs.

Methods:

For the fresh thyme, cut the pieces of branches so that only the part with leaves and flowers remains.

Put the thyme in a pan, press well, cover with water and bring to the boil.

Put lid on pan and simmer on low heat for 10 minutes.

Remove from the heat and leave the liquid to infuse overnight.

The next day, strain the liquid with and weigh it (for 200g of thyme, this is about 2 litres of liquid).

  • Syrup as a treat:

Add sugar to 50% of the liquid's weight ( 2 litres of liquid = 1 kilo of sugar).

Bring to the boil to dissolve the sugar and turn down the heat to low.

Then cook on low heat until a more or less syrupy texture is obtained.

Put into a sterilised bottle and keep cool.

  • Syrup as remedy for cough:

Add sugar to 75% of the liquid's weight (2 litres of liquid = 1.5 kilos of sugar).

Bring to the boil to dissolve the sugar and turn down the heat.

Then cook on low heat until a syrupy texture is obtained.

Put into a sterilised bottle and keep cool.

 

Applications recipe thyme syrup:

As a delicacy: To taste, put a little thyme syrup in a glass and add water, white wine or a dry sparkling wine.

Against cough: Use 1-2 tablespoons of thyme syrup up to 3 times a day in case of cough or cold.
