The honey from Narbonne is mainly made with the flowers of rosemary.
Rosemary is a shrub that grows wild, around the Mediterranean, on sunny, dry and rocky terrain. The blue flowers always attract bees that convert their nectar into a highly prized honey. Rosemary blooms from January-February to April-May. Flowering is long, regular and peaks with the arrival of spring.
So the harvest of the honey is very early in the year but does not last long, between late April and early May. So the quantity of rosemary honey harvest depends on the flowering of rosemary.

This honey comes from Occitania, southern France, near Narbonne, in the valleys of the beautiful Corbières.

What is ‘Narbonne honey’ really?

The term “Narbonne honey” dates back to the Middle Ages, and it is a honey from the Garrigue that is harvested on St.Jean (24 June). This corresponds to the end of spring honey. After that, it is usually too dry in this region to make honey, the bees resume their work in autumn for their winter supplies.
If we want to be precise, pure rosemary honey is not really honey from Narbonne because it is harvested earlier. But in ancient times, people did not have the means to separate the honey by doing multiple harvests.
