- n°1 Provencal dishes: paprika, rosemary, coriander, fennel, thyme and ground chillies.
- n°2 Fish dishes: turmeric, lemon peel, orange peel and blue poppy.
- n°3 Moroccan dishes: molokhia herb (cheesy herb), shallot, mustard and carawayseed.
Preparation and tasting:
The salt is not ground like, say, pepper. But rather, we let this seasoning grain away between our fingers and sprinkle it on our dish like this.
Les sels de Gruissan:
The Gruissan salt mine is located in an exceptional setting in the heart of the Narbonne Regional Nature Park. Between sea and mountains, the salt mine stretches over several hectares between the 'La Clape' nature reserve and the Mediterranean Sea.
At the heart of this pristine nature, salt crystallises under the influence of the natural evaporation of salt water. As the autumnal equinox approaches, salt reaches full mineral maturity: magnesium, calcium and other trace elements.
