Preparing risotto with truffle:

  • First, rehydrate the truffles in the enclosed bag.
  • Second, make one litre of poultry stock and keep it warm.
  • Then fry 5 shallots lightly brown in olive oil.
  • Then add the rice and fry for 2-3 minutes.
  • Deglaze with 10cl white wine.
  • Then add the stock. So that the rice is just submerged.
  • Cook for another 18 minutes on low heat, adding broth little by little.
  • Finally, just before the end, mix a nut of butter and the rehydrated truffle with its liquid.
  • Bon appetit!
