Preparation of focaccia;

Dissolve the yeast in a glass with a little lukewarm water and a teaspoon of sugar. Put the flour on the work surface and make a well. Add yeast and start kneading.

Add the salt, the olive oil and, little by little, the rest of the water. Knead the dough for at least 10 minutes, until it is smooth and even. Moisten your hands, form a ball and leave to rise covered in a warm place for 2 hours.

When the dough has risen, press it flat with your hands on a baking tray. Then make small "holes" in it with your fingers and pour in a little olive oil. Then add fleur de sel and sage leaves, which you press lightly into the dough.

Cover your focaccia and let it rest for another 30 minutes. Finally, heat your oven to 200°C and bake the focaccia. It should cook for 8 to 10 minutes, until it is golden brown. Enjoy your meal!
