Asparagus morel recipe


This asparagus morel recipe is a delicious combination in a simple and flavourful recipe. The earthy flavour of the morels perfectly matches the light and fresh taste of the asparagus. Try this dish for a delicious spring or summer meal.


Preparation of asparagus morel recipe:

  1. Soak the dried morels in lukewarm water for 60 minutes.
  2. Wash the green asparagus and remove the hard ends.
  3. Cut a few soft pieces from the asparagus for decoration.
  4. Cook the asparagus in a large pan of boiling water or in the steamer until they are still slightly crisp.
  5. Drain and rinse with cold water to stop the cooking process.
  6. Cut the asparagus into pieces of about 5 cm and set aside.
  7. Drain the morels and save the liquid.
  8. Cut the morels into pieces.
  9. Heat some olive oil in a pan and add the morels. Fry them briefly until they are slightly crisp and cooked. Keep a few pieces aside for decoration.
  10. Then add the cream and liquid from the mushrooms and simmer until the sauce thickens a little.
  11. Season with salt and pepper.
  12. Serve the asparagus, morels and raw asparagus pieces on top for a fresh touch.
